Chicken Burger with Pineapple Salsa

Chicken Burgers with Pineapple Salsa


1 - 8 1/4 oz can crushed pineapple, drained

1/2 cup chopped red or green sweet pepper

1/2 cup sliced green onion

2 tablespoons snipped fresh cilantro or parsley

2 cloves garlic, minced

1 jalapeno or serrano pepper, seeded and finely chopped*

1 egg

1/4 cup fine dry breadcrumbs

1 teaspoon dried basil, crushed

1/2 teaspoon ground sage

1/2 teaspoon seasoned salt

1/8 teaspoon pepper

1 pound uncooked ground chicken or turkey


1. Salsa: in med bowl combine pineapple, sweet pepper, half of green onion, cilantro or parsley, garlic and jalapeno or serrano pepper. Cover and chill.

2. In another med bowl, combine egg, bread crumbs, rest of onion, basil, sage, seasoned salt and pepper. Add ground chicken or turkey, mix well. Make four, 3,4 inch-thick patties. Grill on uncovered grill over medium coals for 14-18 minutes or until juices run clear and thermometer inserted in side of burger reads 165F. Turn halfway through grilling. Serve burgers with salsa. (burgers could be cooked in oven, on broil for 10-12 minutes.)
